Recipes: Buckwheat Pancakes for Health
Buckwheat is rich in bioflavonoids: rutin. What buckwheat will do for you is to strengthen your absorption of Vitamin C, and build up weak, failing capillaries and blood vessels in the body. It is especially beneficial in childbirth, heart attack prone, and the elderly.
Early Morning Special Pancakes
1 cup of oat flour or wheat germ
1 cup of old fashioned oats
4 cups of whole wheat flour
2 tablespoons of brown sugar or ¼ cup of honey
4 teaspoons of baking powder
2 teaspoons of sea salt
4 large country eggs
6 cups of whole milk-goat milk is best
4 tablespoons of corn oil
Preheat your griddle till water drops dance on it. If you have an old soapstone griddle, all the better.
Blend in eggs and milk; then mix in the dry flours and such.
Mix in the oil, and stir into a smooth batter. Spoon onto the griddle.
This makes enough to feed four pre-teens or one hungry wood chopping husband. Extra batter will keep in the refrigerator-if there is any left. Try adding hulled sunflower seeds and a little honeycomb when served.
Kiss the cook.
Now that you have people interested in real pancakes it is time to move up a notch for the real thing.
Buckwheat Pancakes
2 cups of buckwheat flour-no additives
2 cups of whole wheat flour-no additives
2 tablespoons of brown sugar or ¼ cup of honey
1 teaspoon of sea salt
4 tablespoons of baking powder
2 tablespoons of canola oil
4 cups of whole milk – goat’s milk preferred
4 country eggs
I think buckwheat pancakes cook best on a wood cook stove fired with birch; however Teflon pans and an electric stove give excellent results.
Sift the buckwheat flour and mix with other dry flours and such.
Mix well with beaten eggs, milk and oil.
Buckwheat is a slow cooker, so watch all for all over bubbles, and turn when golden brown.
Pancakes are as old as mankind and take varied forms throughout the world, but nothing ever beats buckwheat. You might think about growing buckwheat this next warm season. Growing your own brings about better health and taste.
